It may have 8 slots, but not 8 channels. One channel can use two DIMMs. That's why dual-channel consumer boards can have 4 slots.

Yes it can. 2 DPC (DIMMs-Per-Channel) is used to increase capacity.

Was actually going to go epyc until I saw board prices and figured it wouldn't game as well.

Epyc won't game very well. Not designed for that kind of usage. You might even be better off with Ryzen 7 2700X instead of Threadripper for gaming.

I was never a huge fan of Scorpions. I was intriduced to them rather late (as in 2007), due to being gifted tickets to a live show with them,  and I pretty much lost everything for them the same day as I was introduced to them.
