In that they were in roasted? Might be the process used to clean the fruit off.  He then roasted them though.  The whole process seemed to be about maximizing volatile oils.  Immediate roasting and brewing, and woven cloth filtering are both about volatile oil preservation. If that stuff is necessary to demonstrate a difference between the one bean process and another it’s likely not something one could even tell the difference with using regular brewing systems.
