What are you trying to achieve with the upgrade? What to you use the computer for? Over all the GPU would be a good upgrade but I don't see much point in changing the motherboard and RAM.

Yep sure is. Usually only noticeable with large blocks of solid colour.

You would need to do it through the monitors HUD. Should be a menu button somewhere on it where you can change the monitors settings.

The easiest thing to do would be to contact the manufacture for a replacement. From the looks of it that's a HP laptop. They are pretty good when it comes to getting replacement parts. Being a ribbon cable trying to find it elsewhere is probably gonna by a lot harder. You could just try finding a supplier who supports that brand and searching to model number to find it.

I'm not 100% sure but the monitor has a headphone jack so you should be able to pass audio through to that.

I wouldn't put it on the GPU if I were you. The back plate will get hot when under load and will most likely cause the figure to wrap over time.

The HP 14s-dq2056TU at JB is $699 and should be fine for what you want. Not an amazing laptop by any means but at your budget it'll be as about as good as you can get unless you get a pre-owned one.
It's got 8Gb of RAM which should be more than enough for word and internet usage, an SSD so it should run pretty smooth. The only thing will be if you start multitasking a bit it might slow down a bit as it's only got a 2 core CPU. It's got Iris graphics though which means light graphics intensive things should be capable. And as an around HP laptops are usually reliable.

I have used it myself to mirror my phone to a TV. There is an option to go the other way but not sure how it works so might just want to Google it.

Depends on what type of phone your have.
I know that Samsung's have Smart View which I think could do that.

I have an Acer which is about 4 years old now and haven't had a problem so far. Never had a MSI one before so can't say what they are like but there other products are usually great so wouldn't see why the monitors would be any different.
As for the two you have shown the MSI would be would I would go for. It's got a higher refresh rate, and much higher contrast ratio, a nice 1500R curve. Personally I would say those differences are worth the added cost but will depend on whether those things will bother you or not.

I have a 1440p ultrawide myself and I would never go back to anything less. 1440p is really just the sweet spot and I can tell the difference between it and 1080p but some people probably can't. I would definitely say an ultrawide is better than 16:9 but again that would just depend on personal preference. Having the extra horizontal real-estate is much more immersive in games and allows for multi-tasking better.
Bottom line is I would say yes it is definitely worth it. I'm pretty sure if you look around the price difference isn't always a 60% increase, just depends on what you look at and what features you want.
