Egg yolk contain lots of protein and the animal fat called lecithin which both are great emulsifiers. They are used in soupy broths to create an emulsion which thickens the broth slightly and also helps to bring out the flavour of the broth since fat is an excellent carrier of meat juices and flavour.

 

There's also an old French method of clarifying stocks and broths (called Consumme) which uses egg whites (raw) added straight to the hot broth. As the whites cook they grab hold of all the large pieces of fat and other undissolved stuff in the broth then they float to the surface so you can remove them along with everything else they grabbed onto giving you a very clear broth with almost no particles in it at all.
