I might actually buy this at some point and hook up 3 cards for a dedicated mining build. Anyone foresee any problems mining with such old hardware? Had fun anyways window shopping for these parts. As for the PSU, there might be some debate that it is not high enough wattage, but I think it is plenty going the Nvidia with 70% power limit

Feel free to change the case, as beauty is in the eyes of the beholder. But I'd take the P400 TG over the S340. Change it if you want, $5 difference. 
You could probably get a 1060 into the budget, if you lowered the SSD to a 120GB, changed the case, and 8GB RAM instead. With the current pricing, it's hard to recommend the 1060 and RX 580

probably because they dont want to pay $100 for every video so they keep ssds with windows on them and just run it with deactivated windows for benchmarks. if it is a personal rig video then i would assume they activate windows as they plan on using the pc often after the video. 

There's not really much point activating Windows on a test bench. 

A lot of the PCs seen in LTT don't exist for long.  They build them, they do the video, they disassemble them and the parts are used elsewhere.  I wouldn't be surprised if LTT has enough actual license keys in the office for the current number of builds operational, but with how activation works, it'd a big time sink to ACTUALLY update the the activation for each arrangement of hardware that is built on a deadline and short lived.
