If I was only able to listen to just one genre of music it would probably be eurobeat because there is quite a bit of variation in this genre.

I think I would quite quickly grow bored of my other favorite genres (which would be trance, techno and the likes)

It depends on how vague or specific you define "genre." Rock is a vague genre that can encompass many sub-genres like metal, rap-rock, etc. Just take a look at the Rock and Roll Hall of Fame, they have multitude of inductees that most commonly will not be considered under the rock and roll genre i.e. Run-DMC and NWA.

 

That being said, I would still pick Rock.

Hip hop (which would also include r&b). So diverse in what you can create, from thumping bops to songs you can just yell out in rage, to rap that makes you question reality, to smooth r&b that you can get intimate to, or cry yourself to sleep to.

Country Rock is ultimately Rock with Country aspects, and is good. Unlike Country, which is largely shit wrapped garbage.
