I should be fine to run a 980 Ti off of a 520W Seasonic M12II, right?

The 980 Ti Requires a 700W quality 500W power supply as a absolute minimum.

Over all yes but it is possible to make it not be enough if you get a very power hungry mobo+cpu with like 4 7200rpm HDDs... for normal mainstream PCs though it is enough and one of the best budget options there is [:

You should be safe if you're running the system in your PCpartpicker link on your profile, but it's pushing it close (also depends if you overclock it).

 

At full load my system is around 400-500W according to corsair link / my UPS unit.

I guess you read that from the spec page? They always over exaggerate, by quite a bit.

It does say 600W on the box, not 700W. Though I'm gonna get an RM750x so I can get another 980 Ti for SLI if I need to. Will that be enough power?

The max I have seen on my system in my signature is 480W. So, in theory, you would be fine but I would get at least 600W
