Just get the 8700k I have noticed zero issues with 8th gen CPUs, aside from the bug. Cockroaches are annoying man.

no, dont get the 8700. it power throttles after 80 seconds because of its 65 watt tdp. it severely holds the chip back

You can get even closer by adding the PSU @Streetguru suggested, or by dropping the RAM down to 8GB. You can even leave out the cooler and be pretty much at $1k.
