So I've been planning to buy this NZXT Kraken X62 liquid cooler. Now I just realized that they only sell an AMD bracket for it instead of intel? What does this mean? Does it matter? I'm really confused.

The bracket that is sold is for the AM4 (new amd socket) socket which came out after the x62. The x62 comes with a bracket that will support all intel motherboards going back over 5years and all modern AMD motherboards/CPUS apart from AM4

The X62 is fully compatible with Intel sockets out of the box. For AM4, a separate bracket would have to be requested (no charge).
