390X vs 2 380Xs

I reckon I could pick up a 390X for around the same price as 2 380Xs, which would be better for 2 displays (1 4k display for gaming, a 1080p display for just doing other random stuff, no gaming)

380X's would be faster.

Single 390X as that VRAM really helps at 4k

 

not nearly as much as faster gpu power.

 

The 380xs will be faster, however they come with the caveats of crossfire. An r9 fury should be around the price of 2 380xs, I'd go for that.

Neither is faster than the other when driving two monitors in Windows.

You could use one or both, and it would be the same (Multi-tasking Apps on Multiple Panels, not Gaming)

Maximums - Asus Z97-K /w i5 4690 Bclk @106.9Mhz * x39 = 4.17Ghz, 8GB of 2600Mhz DDR3,.. Gigabyte GTX970 G1-Gaming @ 1550Mhz

Crossfire is a huge pain in the ass, and comes with no support at launch for a lot if not most games. Go for the 390, add the x if you absolutely have to but it adds very little power for difference in investment. Later if you decide your gaming is much too smooth for your tastes, add a second 390.

Not an easy compare, I have seen that there is more headroom in the 380's for overclock. Got one that happily does 1200mhz with a 1010 base.
2x 380's would see 3584 stream processors compared to the 390x's 2816.
You need more power for the 2x380's, though its only a third more.

If you are working with graphics outside of gaming then the Ram becomes just as important where the 390x has 8GB vs 4GB which could only ever be mirrored.
In games, not seen 4gb get chewed up yet even on high settings.

Space according to Sapphire you need 2.2 expansion slots worth for the 390x vs 2 slots for a 380 (aka more space efficient).
