One thing I noticed in this video is that the part about making a bootable installer for El Capitan was completely wrong. You don't run the installer on the newer Mac in order to make a bootable USB drive, and since the newer Mac was too new to run an old version of OS X of course it wouldn't let you install it. 
 
What was shown and said in the video was basically the equivalent of trying to make a Windows installer by running the Windows Setup executable and installing the OS on a separate computer. Apple even has documentation online for making a bootable USB installer, and all you have to do is use Terminal.app and a simple command that's built into macOS. Run that on the computer that's already working and you'll have an installer for El Capitan ready to go.

I just tested with a fresh server and all I did was change hardcore=false to hardcore=true and then when i died ingame I became a spectator when I respawned.
 
Edit: You want to change hardcore to true in the server.properties file, not the level.dat

Pi-Top's aren't great, they're really meant for kids learning to program and not to be used for any kind of serious work. I would pickup a Thinkpad with a 6th gen i5 and upgrade the ram to 16gb and that should be good enough for what you need. I used a 5th gen i3 laptop for quite a while and while it could slowdown on occasion, it was quite usable for Java programming in classes and Word 365

I'd get either a thin and light or an M1 MacBook air. Assuming you don't need anything windows specific that battery is hard to beat.

While I really love playing games on my pc or macbook (yes, i know) I really enjoy consoles, mostly because of the shared experience, especially with the switch. Most of the games are so accessible and it's easy to play with people who haven't played many games

Thank you but no sadly. There is this software called Xpenology which allows you to run Synology software on your own hardware, and I swear linus did a video about it unless I'm going crazy.

Instead of tonymacx86 I would suggest /r/Hackintosh for a truly vanilla build  

since he's doing streaming, I'd recommend looking at a ryzen 1800x or 2700 instead. he doesn't need 32gb of ram, just get 16 for now and upgrade when he needs it. i doubt he needs NVME, get a 500GB MX500 instead. the G3 has issues with protections, get a G2/G1+ or corsair TXM/RMx instead.
