I'd personally take triple 1080p every day of the week

one ultra wide display?? :P

 

Out of the two, probably triple. Its nice to have the reel-estate :) and scaling sounds like hell.

I'm thinking of switching from 1080p surround to 4k with 1080p outside monitors for non-game additional real estate.

What is the sweet spot for surround gaming monitor size?

I use 23 inch displays and love it, I wouldn't go any bigger than that

After having used both 4K and surround, I'd have to say that surround is the 'better' experience... When it works. In well supported games, it's brilliant, but I find that it is definitely distracting for a while in games like BF4. Once you get used to it, it can actually improve your performance in FPS games as you can see more around you, noticing enemies trying to sneak up on you. 

 

However, 4K has the benefit of just working for most things, as well as looking fantastic obviously. 

 

For uses other than gaming, having 3 monitors is much more useful than having a single 4K one. I found the only real benefit for 4K in terms of productivity is how you can fit much more on the screen with UI intensive programs. 

 

(for example, how I have my C4D setup, there's so much more room on 4K, even with how I have my toolbars setup)

With 3 screens, being able to watch something while working on the other two monitors is extremely useful.
