I've already tried Joplin and Obsidian, and both are way more complicated and complex than I need.  Google Keep was quite frankly perfect for my needs.  Simple rtf editor, no markdown crap, easily make bulleted and check lists, and the ability to easily drag to rearrange check-list.  Inline images would be nice, but I'll settle for them at the top like Keep.  I just wan't that, but self-hosted, apps or web interface for everything, open source, and easy to sync using Syncthing.

 

My note taking needs are simple, but still more complex than what a folder and txt files could do.
