Which sound chip is better? Rwaltek ALC 892 or Realtek ALC 1200?

If you are going to be pairing with a $20 speaker/headset it really doesnt matter.

s / pdif audio output?

Optical audio is rarely used on low end hardware users, makes sense to have it on more expensive chip. As for your other question, it doesnt make any sense to begin with.

Is it worth paying extra for a motherboard with a Realtek ALC 1200 audio chip? And why ALC 1200 audio motherboards have s / pdif audio output? And motherboards with the ALC 892 codec have 6 audio outputs for which each is responsible, and in the case of ALC 1200 6 codec the output is turned into s / pdif output, if so, why?

Onboard audio is onboard audio, of you care this much about the chip on your motherboard I might suggest you research obtaining an external audio device.

Okay, some boards have an s / pdif socket but others do not have this socket and instead there is a mini Jack 3.5 output but what does the output do?

It is also the case that the motherboard has 6 mini jack 3.5 audio sockets or 5 audio sockets, 6 is the s / pdif socket, but if the board does not have this s / pdif socket, what socket is there instead of not there?

The 6 audio out puts are for surround speaker set ups. So each port does two speakers. One does left and right another does centre and rear another does back left right another does sub so on and so on (I probably got the directions wrong)
Its very rare to use these ports for surround sound set ups. Unless your making your own system from powered speakers.

SPIDF connectors again used for sounds systems. A lot more commonly used.

If you have no plans to buy a speaker system it really doesnt matter. If you are the SPIDF may be more beneficial.

When it comes to the difference between the chip. Very little difference in audio quality. The chips only deal with the conversion form digital 1 and 0 into a sound wave. All modern audio chips do this reasonably well and the biggest factor on computer audio is the amplifier components which converts the sound wave to a higher powered sound wave which can be used with speakers and headphones. The amplifier components are different between motherboards and manufactures and is not affects by the Audio Chip Set. Most motherboard companies dont release data for there amplifier components so thats basically no way of telling beyond asking someone with that exact motherboard.
