This is probably the most famous piece of kitchen technology a German can have. 

You should look into Synology. 
They make pretty good NAS Systems that come with everything you need except drives.
So get something like a DS220 for ~$200 and then put 2x 4TB Ironwolf drives in there, set them up in a Raid1 and you are good to go. 
HOWEVER, keep in mind Raid is NOT a backup! I have a more complex Raid at home and do regular backups to an external HDD that I store at a different house, just to be safe. 
 
With Synology you can even set automated phone backups everytime you enter a wifi or even backup the entire NAS to a different NAS easily. So in the future you can buy a second NAS, put that into a friend's house and backup to them.

Standard USB 3.0 is 4,8gbit/s. That's 600mbyte/s, or basically SSD Speeds. 
So yes, the way you do it is the fastest and a USB 3.1 Gen 2 Port will not change that. 

Move the old projects to archive storage, separate drive that has at least another copy of it.
 
I don't do instant sync, I'll sync manually at the end of the day, and the backup drive never connected to the PC longer than the time it takes to update the backup. 
Real time backup and drive always running means a mistake gets synced, and something that infected/trashed your drive would trash the backup too. 

You don't use sli for any of those applications. You use them on their own and just tell the software that it can use 2 cards on their own instead of one. Does it make a difference? Usually yes HOWEVER the 3090 is not always the best choice. You have to look at it on a case by case basis as often the older titan rtx is better or a quadro.

Temps seem alright. The thing is, with the correct mounting hardware you could've rotated the heatsink by 90° which would benefit Airflow and look better. 
Maybe you can change that once Noctua replies and sends you the stuff. 

For the games you play i'd say save your money. 

This is because PCIe 3.0 was introduced in Ivy Bridge motherboard. Sandy Bridge (H61) is only PCIe 2.0

B550 + 5800X or 3700X

I added the 8% FPS improvement over a 1080Ti and multipled the frametimes by 4 and imagined the stutters. Seemed like an amazing slide show.
