dying light.. OK it's not much of a story but it kept me coming back for more till I finished the main quests. a very enjoyable game

I'm trying to find a game I can really get absorbed in. Sadly, I'm pretty peculiar about graphics so that's why I haven't gotten around to finishing Half Life or Half Life 2... Here are some games that I've completed and quite liked:

 

Bioshock Infinite + DLC

Portal/Portal 2

Tomb Raider 

Blacklist

 

Also, what games have good replay value? I find that I don't replay many games after I beat it... 

You should still consider Half Life series. Plus there are mods to make the graphics look better for Half life 2. I suggest you look up the cinematics mod for HL 2. I also thought there was a mod for the original called black mesa but I never followed up to see if it was finished. Half Life 1 and 2 won several GOTY rewards when they came out.

I've played probably a third of them. Portal 2 was the only one with a decent story. The rest that I have played(Bioshock, Mass Effect, Dragon Age, Crysis) would not qualify as good stories in any medium except video games.

GTA IV + Graphical Mods

I hated the GTA IV story. I thought it was the worst of the 3D GTA's. 

 

GTA Vice City however, I think had the best story.

I really enjoyed

 

Dust an Elysian Tail (Awesome gameplay, story, music and replay value. Its quite a lenghty game too.)

The Witcher 1, 2 (I really enjoyed the story and it definitely got replay value as it has multiple endings based on choices you made, both games suffer in terms of gameplay but Witcher 2 is a big improvement over Witcher 1. Both games are lenghty to play. 30-40 hours per game at least).

Brothers the Tale of Two Sons (Awesome gameplay, music and story but it is short. Almost none replay value but that didnt stopped me from enjoying the journey 3 times anyway. CONTROLLER REQUIRED !!!! CANT STRESS THIS ENOUGH !!!! If you dont have it.. dont bother playing it. But it is must play game anyway so you better get one somewhere if you dont own one.).

Mass Effect 1, 2, 3 (What to say, all 3 of them are very solid games and if you enjoy Sci-Fi then this is probably one of the best newer RPGs in that genre. Huge replay value.).

Star Wars The Knight of the Old Republic 1, 2 (The best Sci-fi RPG in that genre at least for me but it is really old game. Huge replay value).
