It depends. Sometimes, its old fottage plus what they had (like when they did that with carrie fisher for the 9th sw), or a deep fake (ik hws not dead but its a good example), like they did to get young mark Hamill for the mandolorian (hew looked weird tbh)

It happens and it happened. Recently it happened with Carrie Fisher, I think she died while they were still filming SW 8. Depending on the circumstances there are a lot of things that can be done to finish the movie anyway - cut out some of the actor's scenes that weren't filmed yet, replace them with a body double if scenes are seen from afar, model them in CGI, reshoot all their scenes with a different actor...

i believethey actually finished 8, were working on 9 at the time. most of 9 was old fottage from 7+8, some cgi

The last Pink Panther movie was done posthumously and was more a reflection of the series including cut footage and out takes. There was also one of the fast and furious movies after Paul Walker ruined a perfectly good classic Porsche.

It's kinda telling that most of the modern posthumous releases came after CGI became acceptable, while the the ones from ye olden days are all "they died after production ended but before the movie came out".

 

Anyway, I think at this point you can pretty much recreate anybody via CGI in some capacity if you can find a soundalike, because accurate voice synthesis is really the less convincing thing of the two right now. The young Princess Leia and Grand Moff Tarkin deepfakes in "Rogue One" looked a bit wonky, but it was the voices that were more distracting to me. 

 

The only example I know of where a deceased person has been "cast" in a role after their death with their own image and voice was Laurence Olivier in "Sky Captain and the World of Tomorrow", where they used older footage and audio of his early movies to create the performance. And, I mean, it helps that most of what's on screen in that film is his face, it's not like they had him walk around.

Besides some cgi, and recutting existing film, Paul Walker's brother was used for some of the filming after he died
