Windows 10 S mode is literally the same OS as Windows 10, but with additional restrictions imposed by microsoft. You can disable it and have a system identical to if you installed 10 Home from the start with no noticeable difference in performance.

The truth is that nobody does. If someone came out with a Linux distribution which was entirely seamless to switch to, trivially easy to learn, and came preconfigured with a 'perfect Wine' (i.e. a hypothetical version of Wine which flawlessly ran everything), I would be extremely surprised to see many people not looking to switch to it once it became stable.
It's just unfortunate that the operative word in that 'hypothetical'. This doesn't exist. I really hope it will someday - but for now, it's sadly the case that most people are stuck with Windows.
Yes, that's precisely the problem. While that is still the case, Microsoft will be able to do pretty much whatever the hell they like, and people will just swallow it.

The best way to achieve opening in incognito by default would actually be to change the command that launching it from the menu runs.
To do this (assuming you are using the Cinnamon edition of Mint), launch cinnamon-menu-editor from the terminal. Select Internet at the side of the window and double-click on "Brave Web Browser", which should open a "Launcher Properties" window.
In the Command section of this window, replace
/usr/bin/brave-browser-stable %U
with
/usr/bin/brave-browser-stable --incognito %U
then click OK, then Close.

Well, if you bought the device legitimately then they should have removed the registration to the organisation it at the time of sale, so it's a mistake on their part and they should be happy to put it right.

The reason for this is that in almost all cases it can be replaced with the term "gratuitously overcomplicated".
"Smart light bulb" -> "gratuitously overcomplicated light bulb"
"Smart robotic vacuum cleaner" -> "gratuitously overcomplicated vacuum cleaner"
"Smart doorbell" -> "gratuitously overcomplicated doorbell"
See what I mean?

Regardless of whether you think this is a sensible idea or not, you have to agree that 8pm to 9pm is a stupid time window to choose if (and it's a big if) you actually want them to be able to access gaming at all. Staring at a computer immediately before they are supposed to be going to sleep is the last thing they need, all it will do is wreck their sleep patterns. 4 to 5 might be more sensible.
