Why are there so many lack of choices in the laptop industry?

Either super tiny with performance compromises or dinosaur sized.

 

Either a bad 1080p TN display or a 2160p 4K display.

 

Either crap specs or an i7 w/ 16 GB RAM.

 

I'm curious as to why the $500-750 market hasn't really developed.  This is the price range that many people with dispensible income look for, but there's no really solid choices.  And the ones in that price range which are desirable aren't really offering much different than what we would've expected in 2015.  The $300 laptops are evolving as potato parts become cheaper and they get the job done.  People who pay $1000-1500 will get the best of modern tech.  And everyone else isn't really getting much.

Because companies don't care. They either want you to buy their top of the line £2000+ alienware type crap or some crappy netbook. It's just the fact that they either want to earn a lot of money from A. cheap netbooks that fly off the shelves quicker than concorde or B. expensive laptops that still create a large profit margin despite the low sales figures.

You are right about the sales side of things.  They either go for high volume or serve an expensive niche market.

People with that sort of budget are better suited to the used market, where you can find great deals for that price.

what about an in between laptop with ips 1440p 14-15" panel, a decent-ish cpu, 8gb, a small ssd, with a chassis that's relatively light and doesn't have an appalling trackpad for under $750?

This is quite rare in laptops TBH. UHD display is more common in comparison. There is also QHD+ and some other high reso

 

High resolution is rare in new laptops under $750. Anyway, these are the cheapest:

that's the problem.  imagine if the gpu market, for example, only had gtx 1060 or a rtx 2080 with no in between.

If you're after a cheap gaming laptop, chances are the GPU is minimally adequate for 1080p. It's going to struggle at 1440p, plus combined with 15" screen the density is going to make running at 100% an eye test.

 

Now, I wouldn't say no to better 1080p displays, as the TN on my Asus has relatively poor vertical viewing angles for example. More expensive models have higher refresh options at least but I don't see the point of 4k on a gaming laptop.
