i have a very tight space above my cpu in my case. How should i cool it.

I get the fun part, I want to see a build log! As for cooling that's going to be hard... Try getting a laptop cooler with tons of copper things and try to integrate that into the metal of the Macbook's chassis.

Buy a sheet of copper, put it between the cpu  and the MacBook chassis and weld it there

Prettymuch, you could also cut little channels between  thee copper and pc and stick a laptop  fan in  there for better  cooling

as for your ram... i have no solution except suggesting you get low profile rams, but those can be quite tall too, but shouldnt be taller than the io ports

the motherboard you've shown takes desktop ram (DIMM)

there are low profile ddr3 rams such as these

they use ribbon cables and proprietary connectors, im afraid you're out of luck there

i know there are some usb powered portable display

as for enclosure, i have no idea

i would 3D print one myself, but i guess thats not a viable option for everyone
