both are fine GPUs, but a different 380 would be a lot better (aside from one from ASUS)

Gigabyte's AMD cards are crap and not much better on the Nvidia side, so EVGA GTX 960 4GB SC.

Go the 380 for more performance, go the 960 if you want shadowplay, and gameworks (some games look better with it although you will get better fps and performance in general with the 380) . I currently have a R9 380 SOC Gigabyte G1 gaming and I have been happy with it except i had some issues running Rainbow Six Siege (note this may have been patched). I'd suggest you go with the 380 unless you need to record gaming footage using shadow play (for youtube or something). Although bear in mind you could have a cpu bottle necking issues if you can afford it upgrade your cpu as well.

get the R9 380 it perform better in games.

For CPU the athlon 860k is not the best and it will limit the graphics cards in some games, will be more of a limitation with the AMD GPU though. I would recommend an i3-6100 and a cheap compatible motherboard instead.

get the nvidia graphics cards, most of those mainstream applications that you are likely to use to accomplish such tasks support cuda acceleration and the nvidia card will be better overall.
