But something like a nicely-marinated flank steak in a taco or burrito on the other hand...

The best cut of steak is the one I get fully cooked on the BBQ for free.  Free steak and free cooking.  Free .. all of it.

I hate filet. No flavor. T-bone or ribeye marinated overnight and char grilled to medium rare.

Depends on the chef and the individual cow. 

 

The best steak I've ever eaten was an Oyster Blade Wagyu (so a chuck cut) - free range, grass fed and cooked to the Chef's recommendation - which I am guessing was blue to very rare with a light dressing. Thinly sliced. Absolutely divine, and melt in your mouth - the marbling texture looked so appetizing and I have had worse orgasms in my mouth before. This was at the "Aria" restaurant in Brisbane.

 

Usually when I think of "steak" I go with the big cut of Rib Eye, though I now usually find if it's cooked Rare or Medium Rare it's just too chewy, so I tend to eschew it at restaurants unless my faith in the chef is high.

 

At home, I'm really lazy and can't be arsed cooking....so tartare,

I get top sirloin roasts and hand cut ridiculously thick steaks when I want to be fancy, but I'm pretty easy so I like sirloin, strip, ribeye, whatever really, as uncooked as the cook dares to make it. My favourite is a steak marinated at room temperature for an hour and lightly seared so the inside is lukewarm and the consistency of jello. <insert Homer drool face.jpg>
