Is it ok to plug a 6 pin from my power supply into the 8 pin in my GPU?

Buy an adapter. 

I have an "800 watts" powers supply (not sure how true is that) with a six pin connector (plus molex, sata and such) and what I believe is a 1080ti that requires an 8 pin slot connector.

 

The 6 pin connector fits in the 8 pin slot. I've read somewhere that the two extra pin do nothing and that I can plug it and use it without any problems. Is that true? I'm scared and I just wanted a confirmation.

Well that may be true, but that doesn't mean the card with actually work without sensing those two pins.
Sounds like the psu is crap if it doesnt have a single 8pin cable.

So it's complicated. Technically the +2 are only grounds and don't do anything, but the 6 pin has a slightly different pinouts compared to the 6 pin part of the 6+2. The 6+2 has one more +12V line where there's supposed to be no pin, and the +2 adds an extra ground to pair with that extra +12V line in addition to a sense pin to make sure the 8 pin is plugged in. If the GPU doesn't detect that second sense pin, it won't turn on. 

 

Basically no, it won't work.

assume this: if the power supply does not have an 8-pin, it is not made to supply the wattage for an 8-pin.

 

they can call it 20 kilowatts for all they like, if it only has a 4-pin cpu connector and a single 6-pin gpu connector, plus some sata plugs.. that number is entirely meaningless.

Going off 12V spec alone that PSU is barely capable of 500W, definitely not enough to power a 1080 Ti system. Upgrade your PSU if you plan on running that card.
