Leaving SLI to get a 12th Gen CPU - Will the new CPU offset the loss in titles that use both GPUs?

I currently have two GTX 1080s in SLI with an overclocked i7 4790k and I am looking to upgrade to an i9 12900k (display is 1440p 165hz). Currently here are only a couple motherboards which support SLI and they cost almost as much as the CPU. I know SLI is dead but that is not the topic of this so I do not need you to tell me that. 

 

I did a Time Spy benchmark with and without SLI and my overall score went from over 14000 to just over 6000 when I removed the second GPU so I am a bit concerned about the potential performance loss when I permanently use only one GPU in other games. 

 

Currently only GTA 5 and RDR2 use both GPU's but I wondered if the new CPU would offset any performance losses in those titles?

Monitor: Acer Predator XB271HU 27" 1440p @ 165hz

Keyboard: Razer Black Widow Chroma

Mouse: Logitech G502

Sound: Sony MDR 1000x Headphones, Blue Snowball Microphone

 

Laptop Specs:

Gigabyte Aorus 15G

CPU: Intel i7 10875H

RAM: 16gb DDR4

Storage: 512gb NVMe, 1TB Crucial MX300 SATA SSD

GPU: Nvidia RTX 2070 Max-Q

Scores are being help back by that old cpu regardless. So no point to care about losing of them for scores. Get a real cpu and sell both cards and get something newer. Best of both worlds. Dont think theres a game you can play with sli where that cpu would handle it.
