Depends.

Setting the system to high performance / best performance, you prevent the CPU from downclocking, this could limit you from enjoying Turbo Boost. And waste power while the system doing nothing or when you are browsing the web or when browsing folders.... etc.

Intel technology (AMD has the same, but I forgot its marketing name), it allows the CPU to burst in performance temporary... like a temporary overclock if the CPU finds that it had temperature headroom. Cooler the CPU, the more and longer and faster it can push the CPU.

So, if your CPU has a base clock of 1.5GHz (say), that is the speed the actual speed of the CPU. If it says: Turbo Book 3.5GHz, then that is the peek speed the CPU can possibly go if it cool. What's the difference in performance at the end of the day? Slightly higher score in benchmarks if you have those massive coolers.

In day to day activity, even if you compile code or you do video editing, or gaming, it would not change anything. I don't think it is worth it.

But, up to you. If you have a scenario it benefits you more, then go ahead.
