you will get a higher FPS with a better card in basically any game so they should all use 100% of the card

yes it can. i've built a first person shooter in it and with openGL, lwjgl and custom vs and fs shaders, i was able to achieve 60 FPS at 4k

I'd add Ethan Carter and Alien Isolation to that list myself. Not necessarily the most taxing, but they look good imo.

minecraft isnt even that demanding for gpu. i run a modded minecraft and it uses more cpu then gpu

Agree on Witcher, but GTA V is more CPU-oriented, my 760 can max out everything except shadow (high) and no MSAA
