Yes. Basically this. If you're part of a large project, use whatever the project is using. If you're doing a solo indie project use whatever works best for your workflow.

Yes, all of those things add extra complexity but increase visual quality. Lighting effects like occlusion are also incredibly important for realistic effects.
But keep in mind, not all game design is about realism. Look at some of the most beautiful games of 2017. The Witness, Breath of the Wild, and many other games intentionally eschew a realistic design, and as such a lot of those effects may not benefit their aesthetic.
It's about changing the rendering engine to best suit the aesthetic *your* project needs, as opposed to the default of their engine.
If you're really serious into learning how to get the most about rendering engines, I would *strongly* urge you to look more at different rendering techniques, learn how different shaders work and what they do, learn the basics of lighting and texturing, physicality, and all of that. Those things will help you get the look you're wanting, realistic or not, out of whatever engine you choose.
And if you're experienced enough to write your own shader code that's a *huge* asset if you're looking to be hired down the road.
