gtx 1080 sli for z170 or x99 better

The 6700k is perfect for it.  The cards will run at x8 + x8 in SLI, but there's little to no loss with that. 

 

If a 7700k handles a 1080 Ti SLI well, a 1080 SLI will be no issue for a 6700k.  I had the 1080s before the 1080 Tis.

I wouldn't even bother getting another 1080, but yes, you're going to be fine.

No reason to go X99, keep your Z170.

 

Edit: SLI isn't really worth it, but I will not take the choice for you. Your rig right now is pretty good for gaming.

Main:  1650 v2   @ 4,6GHz   -   X79 Deluxe                -   GTX 1080 @ 2000MHz   -   24GB DDR3 @ 2400MHz / CL10

Side:   i7-4790K @ 4,5GHz   -   Maximus 7 Hero        -   GTX 1070 @ 2114MHz    -  16GB DDR3 @ 2666MHz / CL12

6700k is more than fine, but if you do feel the need for the more cores, DO NOT buy x99 now, x299 is a month away.

Are you overclocking the 6700k?
