Channel, paths, and layer menus are all on the right side not left...

It's because you can customize your window setup, like any good program. Take a look in the Windows section (in the toolbar above) and see what windows you need. You can detach and move the windows to wherever you want. For example, in the video on the left I see they have detached the tools window and made it smaller.
