benefits of E-atx vs atx?

There's no inherent benefit. If you have an ATX board and an E-ATX board that have exactly the same features and such, there won't be any benefit. Usually E-ATX boards do have more features, which is why they are E-ATX, because they couldn't fit everything in the normal ATX form factor. So those boards would be better but it's not being E-ATX that makes them better. The form factor itself doesn't do anything.

usually has more PCI-e and other connectors.

Typically it allows for things like more fan headers, with some better layout of components due to more room. It doesn't really do anything for performance, it's just a little more room.

boards no, but cases yes, E-ATX case gives you more room to work with. less cramped. And no need to worry about will this gpu fit into my case. Corsair 900D fits a HPTX and that's much larger than a E-ATX.
