Would you rather game on 3 monitors in surround at medium settings or 1 monitor with maxed settings

I have never gamed on a 3 monitor setup with I was wondering what you guys would say.

1 Monitor, maxed settings.

 

I've played Counter Strike for so many years, i'm twitchy in fps shooters and don't like having to turn my head to see to the side.

1 Maxed then have 2 Aux monitors.

Really depends on the game. 1 monitor on anything except racing or flight sims
