Anyone who eats steak above medium rare is doing it wrong.

My old culinary teacher was once asked to make a well done steak. He then took off his boot, plated it, and told the waiter it was ready. The waiter was shocked, and said, "I asked for a well done steak, not your old boot!" My teacher replied, "what's the difference?"

Ribeye or filet. Sea salt, cracked peppercorns. Gas on high, knob of butter, ~2 minutes a side, rest 4 minutes. Should be rare/medium rare.

Mooing, with a red wine demi-glaze, with cooked onions (slightly charred). With a side of baked potato drowning in butter.

 

Add a beer to that and I'm golden.

Ketchup is better than mustard.

GUI is better than Command Line Interface.

Dubs are better than subs

Problem being, some places don't just use that scale, they add on top of it.

 

Asked for Well Done (I fucking hate seeing Red in Meat)

But they didnt mention THEY have Very Well Done.. I mean WTF, every place I go, Well Done is the top tier cooking level for Meats, and I like it that way.

So I order, Red as hell, so close to the medium-rare my brothers eating.

 

Handed it back, got a refund instead of another meal (considering I just sent it back) and left.

Next time I went in, I told them about "last time" and manually added a note +EXTREMELY WELL DONE underneath the Very Well Done before it was sent to kitchen.

 

Came out PERFECT, crisp edging, meat on the inside was actually cooked, 100% awesome meal.

 

So yeah... Extremely Well Done is now a thing. Cos if they can make a new one up, so can I.
