Learn to code? That is if there's a public access to the internet on a plane? If you haven't yet learned any code language, start with something easy like HTML, C# or Python.

 

Or just do some deep web surfing trips on the internet just going from one link to another and seeing where you'll end up in a few hours...

I was on a flight to Toronto (8hrs) some years ago with air canada and they had in flight entertainment. Everybody had a screen on the back of the seat in front and you could watch movies, tv shows, whatever you wanted to. You could choose what to watch yourself.
