Freezing the balls off of my PCs

They can withstand subzero temperatures without issues, just imagine PC's and phones being shipped during winter time, they stay in ice cold trucks over night in subzero.  Just let the PC's and Laptops warm up to room temperature once you get them into a normal / heated room, Don't turn them on immediately as this can cause condensation as you mention. Just let them get to room temp and you will be fine, no problemo.

You should be fine if you let your devices get up to room temperature when they are in your house. This wouldnt be a problem if you also have a way of dehumidifying your new house, if you let your devices get dehumidified for couple of hours before turning them on, you are fine.
