First Build - Coffee lake i7 8700K - Need advises

So, I'm planning to have my first build using some Hot Coffee.

Goal: A monster gaming/ Media/ Work PC with silence in mind.

Case: Define R5  << where is R6, Fractal?

CPU: i7 8700K

Mobo: Z370 or Z390 from Asus

RAM: DDR4 4100 something like this. 8x 16GB  (Maybe will get up to 32GB)

PSU: Seasonic Prime 850W or 1000W      <<< Need advice with that. Which one?

CPU Cooler: Noctua D15S

Thermal paste: Arctic Silver 5

OS Storage: M.2 850Pro 512

+ Some SSHD's obviously.

I plan to stay with integrated intel HD 630 for some time and then get 1080Ti or 1080 equivalent of Nvidia Volta, whenever it comes out...

Now two questions:

1) I am still confused about when can I buy i7 8700K and those Z300 Mobos. Is it October?

2) Which PSU would you recommend out of those two listed above? I'm looking for a long term performance and stability and 50-100 bucks does not matter to me. I am building this for the next 8-10 years with slight upgrades down the line.

3) Any other recommendations/ advises are welcome.

P.S.

I respect AMD very much, but I'm planning to go Nvidia and Intel route, so no need to advice me otherwise, not happening.

DON'T BUY SSHDs!

Intergrated graphics can't game. Or render. Don't expect it to.

Mainstream never has more than 4 ram slots so you cant have 8 ram sticks. if you want 8 you need to get X2066( LGA2066, X299 tanks @JDE )and a cpu thats support 8 memory lanes

Psu 850W is good

True, but how much wattage do I really need. I mean even in case of a lower load the efficiency is higher if the capacity is high. At 50% load 1000W has efficiency of 94%,,,

It can game, just at low settings.

Less intensive games will work fine at medium or high.

Rendering is done almost all by CPU so it doesn't really matter if he doesn't have a GPU.

1) It can not be assured with an exact date when it will be out, since manufacturers been busy making boards for ryzen lately & now Intel requiring new boards should take a bit time to prepare. they said desktop processors coming at fall (september?) , can be end of October til its available or starting of November.

2) If you don't have plan to do SLI with 1080 ti then 850w Psu will be sufficient. Gtx 1080 ti Oc'ed power consumption on full load not above than 400-410w even at peak. &  8700k supposed to be 94w TDP ,with overclocked assume not more than 150w . So you are good with 850w Psu but do get 1000w if SLI :)

3) since you are waiting for coffee lake & will wait longer for 1080ti. you might be close to Volta release. It might be the best if you can get volta.
