I'm planning on building my first ever PC, my use case is mostly for gaming and picture & video editing on a 1080p monitor, my budget is around $1000-$1200. Should I change anything?

The stock CPU coolers that come with the Ryzen CPUs are fairly decent. My advice is to start out with the stock cooler at first, and after using the stock cooler for a while if you feel like it's not living up to your standards, then you can look at spending money upgrading it to an aftermarket cooler.

 

You won't really need it for a 1080p monitor, but I upgraded to a 1070 Ti instead for you, just in case you decide to upgrade to a 1440p or 4k monitor down the line. If it's just a 1080p 60hz monitor then you could probably go with a RX580 8GB or 1060 6GB instead and save a fair bit of money. Upgraded with better storage drives, better motherboard, and better PSU.

The build is good, but the SSD...I usually know that samsung SSDs are the best, you can get one for 88 dollars. As well you can get a 1070Ti.

adata is fine too. It's not up to the crucial (micron) or samsung level, but it's great for the price

It should offer some very good gaming performance with the 1070 and your video editing will be very good with the 8-core 1700x.
