Is there a external SSD with 40Gbits/Sec to utilize the TB3-Connection on MBP 15"

I found external NVME-SSDs but they are limited to USB 3.1 Speeds...

 

I need a 500Gb model and would love to built it if there's an enclosure.

It is limited to speeds of USB 3.1 because that is the connection type of the enclosure or external drive, the standard interface you are looking for is the thunderbolt 3. The only thing you need to make sure that your computer has the thunderbolt 3 port/jack, it must have the "thunder" next to the port for thunderbolt, otherwise it is just a normal USB-C port (USB 3.0).

If the port doesn't have the thunder, then it is just the USB 3.1 type C:
