Can I use my old laptop as a server/nas?

Don't do it. Your laptop is old and will die soon. So look into better options if you need a nas. 

I have an Acer Travelmate 4740 and was thinking of using it as a NAS? Is it viable and should I use freeNAS for it or go with Windows Home Server?

id just make a file share of your hdd in thre current os, no need for a server os here. in right click on a folder and select share

yes, but i'd recommend against. i have an old acer laptop that pulled server duty for about 3 days before the fan started to give in..

You could, you just won't have a lot of storage thanks to the limitations of using a laptop. I don't see a benefit for using freeNAS or Home Server in this situation. Also you'll probably end up burning things like the power brick if it's on 24/7.

I mean at that point, old server hardware from ebay could be a better deal?
