And what would you need the extra cores for, and in what scenario is an 8700k not going to have enough for you?

Your use case is obviously not the OP's use case as he stated exclusively gaming. To be more constructive you could have asked him if he would be recording before making the recommendation. If the OP is exclusively gaming, and shooting for the highest FPS then the 8700k is the best way to go right now. 

 

If he wanted to record 4k OBS then he'd go the 7980XE anyways as he suggested.
