Can SLI help with video encoding?

I am trying to decide if getting two 1080s would help with video encoding in Adobe CC or should I a get a titan XP?

I don't think so ... even one 980ti is not 100% being used. The workload you are working on also depend the gpu usage in rendering. I would say always get one stronger card as not all software and game supports sli/crossfire.

No. The programs will use them separately, but to say it's "SLI" isn't [correct].

In theory, one card could be configured to decode input videos using the hardware decoder, while the second video card could help with the rendering of the final video.

 

Some plugins can also use the video card (one or maybe both) to do some denoising, color filtering etc

you can use more then one card though no sli bridge would be needed

Two 1080s between them have around 1500 more CUDA cores than the Titan XP, so they are potentially better for pretty much the same price.
