Changing Ubuntu Server Console size in Hyper-V

For some reason, when I connect to a Hyper-V VM from the Hyper-V Manager, the size of the VM's window is unusally large, and it takes up a huge amount of space on my 1080p monitor.

 

Is there a way to make the VM open into a smaller window, either using Hyper-V or within the VM?

 

For reference, I'm using Ubuntu Server 16.04.1 as my VM OS. I just want more workspace, if nothing else.
