I'm coming close to finally building another pc for myself (Last one I built was in 2007,lol) and I've come across something fairly interesting. (Maybe interesting enough for a video? :D) So, I've been looking at a Xeon processor, in particular a Xeon E3-1240 v5, instead of a core i7. It looks to have similar specs to a core i7 except no onboard graphics. (which I don't want, and won't use, anyway) it's also cheaper than a i7 6700. What do you guys think?

The thing is,  while it is a totally capable cpu,  its based on haswell ( lga 1150),  compared to skylake (lga 1151)

 

Edit : thought you meant e3 1240v3.

 

For that skylake xeon you will need a different chipset. 

But it is a very capable chip.

Skylake Xeons don't worth with consumer boards. Go for Xeon E3 1231v3 + H97

Skylake Xeons got locked down to server boards. If that's a server board it will work but you lose other featues. My advice is to go for the much cheaper E3 1231v3 + H97

It's a C232 board, so it's compatible, and I don't really see where you're missing out on any important features from Z170 (setting overclocking aside, as Xeons are locked anyway).

 

But you're paying about $40 more for the CPU, and probably $50–70 more for the motherboard than you actually have to. There are some features that Skylake has over Haswell, but they're not necessarily worth that much more.

I'd recommend the i7 simply because it has on-board graphics. In the case that your video card fails and you don't have a backup, or your PCIe x16 slot/s fail, and you don't have a backup motherboard, you're going to want to have onboard graphics. I've run into this issue once before and it was horrible, considering my motherboard has no on-board video. 

 

So, i7 for troubleshooting purposes. As well as everything everyone else has said.

Skylake has a few advantages, I can't really argue against it. I own a 6600K myself. If the OP wants spend a bit more to get slightly better performance and more forward-looking memory, I don't necessarily think it's the worst idea ever.

 

I don't think you'd be lacking anything important with a Haswell-based Xeon, though.
