Kinda split though; mustard on a hot dog and ketchup on a hamburger.

Ketchup is nutritionally ass, so I don't use it.
Mustard is a bit better, but it goes only with specific foods...
So, neither. Also, they tend to detract from the taste of whatever I'm eating, with a few exceptions.
Don’t have a go-to sauce... each dish kinda needs its own.

Sauce for what?
I eat  spaghetti with my own tuco.

 

I eat junk food (wieners, hamburgers) with appropriately industrial mustard (I only like the bad one, I can't stand Dijon and proper Senf), and sometimes Tabasco.

 

I don't use ketchup.

Anyone with a sense of taste knows mustard is clearly better, if I had to pick I'd say English 1st and Dijon 2nd. Ketchup is just a weird concentrated tomato paste.

 

Homemade burgers made out of actual meat, with the right amount of mustard, make a great lunch.

True,but also ketchup fits to almost everything, my favorite spaghetti are a Japanese receipt and they use ketchup instead of tomatoes... It's sooooo good!

Yeh, but it's the vinegar that does it for me, ig

I prefer a paprika dip/spread (bonus points if it is smoked)

A lil spicy, not too sweet or savory and most of all, paprika compliments every meat.

 

Tirokafteri too and can't forget some tangy BBQ sauce

Although I hate mayo (too fatty for my liking) Honey Mustard is probably the best version of mustard (Dijon is a close 2nd).

A nice honey mustard is hard to find in general tho for me

Also the third one would be horseradish paste. All 3 (mustard, ketchup and horseradish) can be delicious with meat products.

I think it's a derivative of what other people call "ragú alla genovese", but in Argentina it's tuco, derivative of the Genoese term tuccu. And probably no family use the same recipe

It probably kinda looks like meatballs but tastes quite differently, also you *have* to have potato salad with it , otherwise it's kinda meh lol.

You can get this everywhere here?

 

It's ok but doesn't really fit for everything, I think dijon generally fits better to fish than meat.

Ketchup, I don’t even keep mustard in the house that’s how much I dislike it.
