No.

The PC may refuse to even boot without all of the GPU power connectors populated.

Your PSU probably has multiple 6+2 cables, so use 1 for 8 and another for 6.

If the PSU is old enough and crappy enough it only has a single PCIe cable you should probably replace it.

Can you tell us exactly what PSU you have?  If it only has 1 cable like that, it's old as dirt (as far as PSU's go).

Psu is 2021 production year

It's Falcon 750w unit

40Amps on 12V rail

Does it have multiple 12v rails?

If a 750w psu only have 40a on the 12v rail its not really a 750w psu, and a 500w really.

But a single 8 pin is a pretty big limit, and makes me think the psu has taken more shotcuts internally.

A molex or sata adapter should work, but I'd try to get a different PSU if you possibly can. That psu seems like a dud with such few cables and fake 750w rating.

the 2 sata or molex to 6pin adapters should work, but there is a risk of blowing up the psu, as its a very cheap psu and you would be pushing it kinda close to its rating

It's extremely rare for a 750w PSU to have only a single 6+2 Pin.

It's probably a very cheap noname fireworkcracker-PSU.

It's really not recommendet to use them. They might have issues delivering even the Power it says on Paper, but also might miss some of the security mechanisms

Which means: Even tho it says 40A on 12V, which is 480w, i kinda doubt it can safely deliver this amount without any issues.

If you're unlucky, your Hardware can be destroyed. If you're VERY unlucky, a fire could start.

No matter how much you want to save Money, invest at least into a halfway decent PSU Model like idk, BeQuiet SystemPower 500w (which is MUCh superior to a 750w firecracker.)

Well, you don't need 750W for a 1080 and... anything, really.

Getting a reliable unit with a modern array of cables is more important here than the supposed wattage.

The psu possibly wouldnt blow up (i estimate about 360w max load), but id replace it as soon as possible tho.

A reputable 500-550W unit will do just fine for this build.

Can i run my gtx 1080 with only 8pin power without additional 6pin power?

I have an MSI aero 1080 that I ly has an 8-pin and it's fine, have also (attempted) to bring back to life and MSI Armour 1080 that had a 6+8 pin input and it was able to power on. I wouldn't recommend using only a 6/8 pin, but oulther cards can have a single 8-pin as the source. It will likely boot, but it may also not.

Well yes.

because this unit is for 1. lying to you about being 750w 2. crappy pc hazard psu that will kill your components 3. the good ones cost money because they WONT kill your pc

You can add a molex adapter. It's a terrible idea and will end up killing something in the pc.

Just replace the psu with a decent one. Got a site to shop from?

if you don't enjoy the pc for the limited time it will work.
