I'm just letting you know, my 780 has issues with THREE monitors. As games get more intense, so does hardware.

Can you please elaborate significantly with what your desire is? You need 5 monitors? For what? Please describe what setup, programs, and games you'll be using on it.

Yes, the 6990 could do 5x eyefinity in 2011 when it came out, but games are significantly more demanding now.

The HD 7990 could definitely do 5x Eyefinity, but you may still see frame drops below 60FPS (or even 30FPS in some games).

If you have a $2500 budget, then getting 3x GTX-780 Ti would be your best bet, and that would run you $2400 + taxes. You could also go with 2x GTX-Titan Black Edition, but that would be the same price, and 3x 780 Ti's would be better than 2x Titan Black Editions.

Also what CPU, ram, etc, are you pairing with the setup? What motherboard? What PSU?

For Sale: Meraki Bundle

You seem to really want the AMD cards eh? The HD 7990 actually should be fine, as long as you're ok with occasional frame drops. This is from Computex 2013:

I would go with either the HD 7990 or 2x (or 3) GTX 780 Ti.

Why the HD7990? For surround gaming, AMD is easier to setup AFAIK, so going AMD make sense. The HD7990 has 6GB or VRAM, but each GPU has access to only 3GB effectively making it 3GB/GPU. Your best bet is to go 2x/3x GTX Titan or 2x/3x R9 290/290X. Although the 290/290X has 4GB of VRAM, it should be sufficient to drive up to 5 monitors (in portrait mode I suppose) as long as you don't get too aggressive with the AA setting. I have 2x R9 290X driving 3x 1200P monitors, and they are fine although I do max out ingame setting whenever I can.

For 5 monitors, perhaps tone down AA a little. I've read somewhat that for more than dual card systems (that is, 3 cards or four), AMD cards tend to scale better. For dual card setups, CFX and SLi scale about the same with negligible differences between them.....except for games that favor one over the other that is.

BTW, before going two way R9 290X, I had a 3 way HD7970 CFX setup, I saw less issues with micro-stuttering that many with daul card setups complain of. I managed to play a good variety of games at max or near max setting @ 5760x1200.
