1. ) Is there a way to run dual channel with 3 identical sticks?

dual channel = two sticks running together.

So not sure what your questions exactly is, but I'm gonna go with a no. You can however run dual channel on two sticks and run a single channel on the third.

2.) Is it possible to force an app to run from a specific stick? (ex. Forcing Firefox to rum from the memory in Slot 2)

No.

1.) Yes but you will run an odd number of ranks and some motherboards may not like that so your experience may vary.

2.) No idea, why though?

Hybrid mode allows a mix of dual and single channel.

I WILL find your ITX build thread, and I WILL recommend the SIlverstone Sugo SG13B

I had 2 X 8GB. One got a slight issue and crashes when gaming and running a large comp in After Effects. So I bought another stick and now it's running 2 X 8Gig fine. My plan was put all 3 and force AE and the 2 games to run from the 2 healthy sticks. OS - Win 10.

If you have a bad stick then don't use it.  A good many RAM kits have lifetime warranties.  You should contact the manufacturer.

And you can't accomplish your goal of assigning RAM.

True. It's an old DDR3 and unfortunately shipping cost is more than the second hand value and this is my secondary system So I'm trying to learn something .
