Adblock for safari already exists, Unless you want to use it in apps, Which you will need to use to jailbreak.

Tweaks for snapchat and instagram probably require flex.

You could use a raspberry PI as a PiHole which is a network wide ad blocker

Oh and turn off two step authentication just in case.

make a backup, make sure its not your only phone, and just in case prepare to have a few sleepless nights to get it to work.

 

oh, and do research, LOTS of research.
