Absolutely a win for consumers who don't want to unwillingly keep giving their data to these platforms. Apple probably deserves more credit here for implementing these features, that many users don't even notice but still benefit from.

As long as that revenue isn't made through tracking-based ads (without user consent) I am fine with that.

Odroid H2+ has 2x 2.5GbE-connectors, so it's a nice, somewhat future-proof choice. PFsense 2.4.x doesn't support the Ethernet-hardware, but 2.5 does, so either you wait for 2.5 to be released or use the beta (which seems pretty stable already). Or use OPNsense instead -- PFsense and OPNsense have more-or-less the same functionality, just different mentality regarding development.
UP Squared is another nice option, sporting 1GbE-connectors.

I have both and I, personally, prefer the Odroid, but YMMV and all that.

Geekbench isn't a good benchmark. However other benchmarks are also showing great performance for the M1 Chip.
