Flat out 2 maybe?

I've been playing Burnout Paradise again, and it's just as good as ever. The "remaster" is more of a texture pack mod with more particles and better AO though.

Forza Horizon 3 (though its said to crash to desktop from time to time)

Forza Motorsport 7, maybe 6 Apex

I've always really enjoyed the Grid and Dirt racing series by Codemasters. especially Dirt 3 and Grid Autosport can be great fun with a bunch of friends. If you're looking for some slower stuff, Eurotruck Sim 2 with Multiplayer mods or spintires would be a solid way to go. If you want to go the simulator racing way, definitely go for something like Assetto Corsa.
