You don't need 800W+ for that system. 800W+ would only be needed if you're doing LN2 overclocking or running two 1080ti graphics cards.
I have a fairly similar system to what you're planning - I'm using a slightly overclocked 6700k (4.3Ghz) with a GTX 1080ti and it will be drawing less than 500W under peak load.

I'd recommend a good quality 550W PSU. The Corsair VS series aren't very good, and if you want to power expensive, power hungry hardware such as a 1080ti I'd recommend replacing it with a better quality unit.
Check prices in your country and availability on 550W units such as the Corsair RMx series, Corsair TXm series (grey label ones), Seasonic Focus Plus Gold, and Be Quiet Pure Power 10 600W - just to give you a few suggestions to get started.

500-600W would be enough.

Maybe up to 750 if you have a big cooling loop and plan to OC a lot.

Look at some seasonic power supplies.

Max power load for the the 6700 should be around 100w and the 1080 ti at 250w with peaks going up to 300w (in a few ms).

 

I suggest you getting a 600-650w for some headroom for the PSU.

It's perfectly fine with running the system mentioned which only has 1x 1080 Ti and the newer 2015 and 2017 are considerably better than the original green label CX's.

Yeah but if we are talking about a 750€ Graphics card, I don't see a point in saving money on the PSU and not getting the better ones.

 

If you can afford those kind of hardware, you certainly can get a good quality PSU as well.

No, I'm saying that its not something I'd use for a high end system with a 500€+ Graphics card.

For that you can afford a better quality unit than the CX550.

High end or not, it doesn't change how much power the system draws which is just over 300w at peak or ~400w w/oc'ing. If the cpu was being oc'ed, that could warrant something a bit better. The 6700 is very power efficient and is the reason why the CX550 would be plenty for the system despite the 1080 Ti. http://www.silentpcreview.com/article1481-page5.html
